A series born out of a need to elevate Baltic outdoor cooking and eating traditions. Top Latvian restaurant chefs head outdoors with limited resources and conjure up marvelous meals that reflect Baltic nature on a plate. These were the first original series I developed. The entire series was also published alongside a cookbook, which received multiple nominations at the Gourmand International Cookbook Awards in 2010.
